Glorified Rice

1 cup rice (cooked)
1- container cool whip (8 oz.)
1 can (drained) sliced pineapple cut in small pieces
1- 8 oz. cup small marshmallows

Mix well and refrigerate. Simple, and tasty. If desired, more
marshmallows may be added. Keeps well.

Cranberry Bars

1-1/4 cups butter, softened and divided
1-1/2 cups packed brown sugar, divided
3-1/2 cups oats, divided
1 cup all-purpose flour
1- can (16 oz.) whole berry cranberry sauce
1/2 cup finely chopped pecans or walnuts

In large mixing bowl, cream 1 cup butter and 1 cup brown sugar, stir in 2-1/2 cups oats and the 1 cup flour. Press into a greased 13x9x2in. baking pan. Spread with cranberry sauce. In a microwave-safe bowl put remaining butter, melt then add nuts and remaining brown sugar and oats., stir and sprinkle over cranberry sauce. Bake at 375 D. for 25-30 minutes or until lightly browned. Cool on wire rack. Cut into bars. Yield about 3 dozen.

Terrific Turkey Sandwiches


Put leftover turkey in a slow cooker and add minced garlic, barbecue sauce and a dash or two of hot sauce, stir well.  Heat until hot and serve on warmed hamburger buns. With a salad or vegetable, you have a nutritious meal.

Festive Green Bean Casserole

1 cup chopped red pepper
1 small onion finely chopped
1 Tbls. butter or margarine
1 can (10-3/4 oz.) condensed cream of celery soup or mushroom if you prefer
1/2 cup milk
1 tsp. Worcestershire sauce
2 packages (16 oz.) frozen French style green beans; thawed and drained
4 oz. or 1/2 cup shredded cheddar cheese
1 can 8 oz. sliced water chestnuts, drained

In skillet, sauté red pepper and onion in butter until tender, add milk, soup and W. sauce, and hot sauce; stir well. Next add green beans and water chestnuts. Into a 1 1/2 or 2 quart baking dish transfer bean mixture, sprinkle with cheese. Bake 350 D. for 20-30 minutes and cheese is melted. A pretty dish.
