Chocolate Delight

This dessert was served to us several years ago. We liked it very much. I was given the recipe, but for some reason never made it, until two weeks ago.  Hope you enjoy it as much as we did. Guests will think you have worked hard on this. 
A.  One cup all purpose flour, dash of salt, 1 Tbls. sugar, one stick margarine or butter, 1/2 cup pecans chopped. I often use walnuts in place of pecans.  Mix together and press in baking dish (or pan) 9x13.  Bake 350 D. 15-20 min. until  lightly browned.  Cool. Easier to mix if margarine is very soft.
B.  One cup conf. sugar, 8 oz. pkg. cream cheese, one cup cool whip. Blend together with mixer and spread over baked crust.
C.  In large bowl put 3 cups milk, one package each of instant chocolate and vanilla pudding, 4 oz. each. Mix well, let set 5 minutes, then spread over cream cheese mixture.
Top with cool whip and more chopped nuts and refrigerate.  Or you may refrigerate and put on cool whip at serving time.

Date  Nut  Ball

1  (8-oz.) package cream cheese, softened.
1  (8-oz. package chopped dates.
1 cup chopped pecans, toasted and divided.
Combine cream cheese, dates, and 1/2 cup pecans, cover and chill 30 minutes.  Shape into a ball, and roll in remaining 1/2 cup pecans.  Serve with apple wedges or gingersnaps.

Sweet  Potato Hash


Three or four sweet potatoes, peeled and cut into 1 inch cubes
One tsp. salt
2 Tbls. butter
2 Tbls. vegetables oil
2 large onions chopped
In large Dutch oven place potatoes salt and water to cover; bring to boil, cook 5 minutes.  Drain and place in large bowl, cover with cold water, then drain.  Heat butter and oil in Dutch oven add chopped onions and cook stirring often until tender, add sweet potatoes cook about 10 minutes or until tender.  Yield 6 servings.

Pigs  in Blankets

2 cups Bisquick baking mix 1/2 cup cold water 8 frankfurters
Heat oven  450 D. Mix baking mix and water until soft dough forms beat well 20 times.  Gently  smooth dough into a ball on cloth covered surface.  Knead 5-6 times, roll dough into 13 inch circle cut circle into 8 wedges.  Place frank on each wedge and roll up beginning at wide end.  Seal tightly by pinching point into roll.  Place on ungreased cookie sheet,  Bake about 15 min. until golden brown.  Check after 8 min. if browning too fast turn oven off and leave franks in for another 5-6 min.
