Simple Vinaigrette

Whisk this together for your salads: Mix 1/2 cup white wine vinegar, 1 clove garlic and one fresh onion chopped in small bowl; let sit 30 minutes. Mix in 1 Tbls. Dijon mustard.  Whisk in 1/2 cup vegetable oil and 1/2 cup olive oil. Add salt, pepper; makes about 1 1/2 cups.

Quick Pickles

1 large jar hamburger dill slices
3 cups sugar
1 cup vinegar
1 oz. Pickling spices tied in a thin white cloth

Mix sugar and vinegar, add pickling spices. Bring to a boil, let cool.  Drain liquid from jar of dill slices. Remove the bag of pickling spices and pour the cool vinegar mixture over the slices in their original jar. Keep in refrigerator, will keep for a year.  Easy and good. This is using the very large jar.

This is a new recipe for me, it's good. Hope you will try it. This recipe needs to be baked at 350 D for 10-12 minutes.
   
Gramm's Chocalate Cookies       

2 cups plus 2 Tbls. all-purpose flour
3/4 cup cocoa
1 tsp. baking soda
1/2 tsp. salt
2 cups sugar
1 1/4 cups (2 ½ sticks butter(soft)
2 eggs
2 tsp. vanilla

Sift flour, cocoa, baking soda and salt, set aside. I just mix this by hand, but you may use electric mixer fitted with paddle attachment. Beat or mix sugar, butter; add eggs then vanilla. Slowly add flour mixture, stirring at each addition. Shape into flat disk, wrap and chill one hour.  Shape dough in balls about 2 inches apart on ungreased cookie sheet.  Bake until set, transfer to rack to cool. Makes 3 dozen.

Down-Home Pot Roast

1 boneless beef sirloin tip roast (3 pounds)
1 Tbls. oil
1 can beef broth
3 Tbls. oil
3 Tbls. cider vinegar
2 garlic cloves, minced
1/2 tsp. dried basil
1/4 tsp. dried thyme
1 small head cabbage, cut into wedges
4 medium potatoes, quarted
2 medium onions, cut 
4 medium carrots, cut in chunks
1 medium red or green pepper, cut in 1 inch pieces
1/2 tsp.salt
1/2 tsp. pepper
1/4 cup flour
1/4 cup water   

In dutch oven, brown meat on all sides in oil over medium heat. Add broth and vinegar; sprinkle in garlic, basil and thyme. Bring to boil, reduce heat, cover and simmer 2 hrs. turning roast, add some water if dry.

Spoon off fat and save. Add vegetable to pan, sprinkle with salt and pepper. Cover and simmer for 35-45 minutes until vegetables are tender. For gravy, pour drippings and loosened browned bits into a cup. Mix water and flour, stir well, add to small skillet with drippings; heat and stir well, serve with meat and vegetables. 

Or all this can be put in oven at 350 D. Baking meat for 1-1/2 hours, then add vegetables and bake another hour until veggies are done. Remove meat and veggies and mix flour and water; stir into drippings until thickened.

I prefer the oven.
