Food Terminology  A to Z (continued)

Pan-Broil:  Cooking in an uncovered, lightly greased pan and
                  removing excess fat as it accumulates.
Pan-Boil:  Partial cooking of food in boiling water and then
                  completing cooking by another method.
Pan-Fry:    Also called sauté, cooking in a small amount of
                  fat.
Pare:        Removing the outer skin from apples or potatoes.

Marinated  Vegetables

4 medium carrots, peeled and thinly sliced
1 cauliflower, broken into flowerets
1 large cucumber, peeled and thinly sliced
1 large onion, thinly sliced and separated into rings
4 radishes, sliced thin  or you can add green pepper
2 stalks celery, sliced
1 (16 ounce) can green beans, drained
1 (15 1/2 ounce) can kidney beans, drained
Italian Dressing

Cook carrots and cauliflower in boiling water about 5 minutes, drain well.  Place all ingredients except dressing in a large shallow dish; toss lightly.  Pour Italian Dressing over vegetables; cover and chill several hours, serves 8-10.

Cabbage  Chop  Suey


2 Tbs. shortening             
3 cups shredded cabbage
1 cup thinly sliced celery
1 cup thinly sliced green pepper
1 medium onion, thinly sliced
1 1/2 tsp. salt             
1/4 tsp. pepper
Chow mein noodles

Heat shortening in a large skillet over medium heat.  Add vegetables, tossing lightly.  Cover and cook over low to med. heat for 12-15 min. or until tender; uncover and cook 2 minutes longer gently stirring.  Add salt and pepper.  Add several shakes of soy sauce. If you would like a little sauce on this take 1/4 cup water stir in 1 tsp. corn starch, a little soy sauce and stir into mixture; turn off heat and stir until mixed.  If you make sauce omit adding soy sauce first to cabbage mixture. Add chow mein noodles on top, yield 4-5 servings.

Broccoli  Supreme

1 (16 oz.) pkg. frozen broccoli
1 can cream of mushroom soup
2 eggs, beaten well  2 Tbs. grated onion
1 1/2 cup grated cheese  1/2 stick butter
1 cup mayonnaise  1 tube crushed Ritz crackers

Cook broccoli and drain well.  Add soup, eggs, mayonnaise, onion and cheese to broccoli.  Pour into large baking dish crushed crackers, and cut up the butter over crackers.  Bake at 350 D. for 45 minutes.
