Deluxe Bacon Burgers

2 large carrots, grated
1 large onion, grated
1 cup mashed potato flakes
2 eggs lightly beaten
1 garlic clove, minced
1 tsp. salt
A few shakes of pepper
2 pounds ground beef
8 bacon strips
8 hamburger buns, optional
8 lettuce leaves, optional

In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix gently. Shape into eight patties, wrap a bacon strip around each patty, secure with toothpick. In a large skillet, cook burgers until meat is no longer pink and bacon is crisp. Remove toothpicks. Serve on lettuce lined buns, if desired.  Yields eight.

Sesame Snow Peas and Red Peppers

3/4 pound fresh snow pea pods
Vegetable cooking spray
2 large sweet red peppers, cut into thin strips
1/2 cup chopped onion
1 Tbls. sesame seeds, toasted
1/2 tsp. salt-free herb-and-spice blend

Wash snow peas, trim ends and remove strings. Coat a large nonstick skillet with cooking spray, place over medium-high heat until hot. Add snow peas, pepper and onions; saute until tender. Add sesame seeds and spice blend, stirring well. Yield 10 servings.

Dutch Peach Crumb Bake

2 cups of sliced fresh peaches
1/3 cup graham cracker crumbs
1/2 tsp. cinnamon
2 tsp. butter or margarine, melted
Dash of nutmeg

Layer sliced peaches in bottom of 8 inch square baking pan. Combine cracker crumbs, cinnamon and nutmeg, mixing well. Blend in butter. Sprinkle mixture over peaches. Bake uncovered at 350 D for 30 minutes. Serving warm is desired. Serves four. Frozen peaches may be used.
