Useful tip: Easy Tick Removal - Apply a glob of liquid soap to a cotton ball. Cover the tick with the soap-soaked cotton ball and swab it for a few seconds (15-20). The tick will come out on its own and be stuck to the cotton ball when you lift it away.

Curry Dip

2 tsp. curry powder
1 1/2 tsp. garlic salt
2 Tbls. sugar
2 tsp. prepared horseradish
2 Tbls. cider vinegar
1 cup sour cream
1 cup mayonnaise
Cherry tomatoes
2 tsp. grated onion

Mix curry powder, garlic salt, sugar, horseradish, onion and vinegar. Add sour cream and mayonnaise; mix well. Cover and chill several hours or overnight. Serve with cherry tomatoes and bite-size pieces of other raw vegetables. Such as cauliflower, broccoli, mushrooms, carrots, celery, green and red peppers, asparagus, kohlrabi or rutabaga. yield of dip is 2 cups.

Egg Rolls

1 package egg roll wrappers(in produce department). Lift each one very
carefully, 18 to a package, you will use all of them. Egg rolls freeze well and can be heated up in 350 D. oven for 20-25 minutes. Drain on paper towel. When cooking be sure grease is hot without smoking. Use medium deep sauce pan and cook about three rolls at a time, cooking about 3 minutes turning once. These are delicious and worth the little extra effort. Nice for a snack or with Chinese meal or other of your choice.  Hope you enjoy. Just be extra careful when working with hot oil.

1 can bean sprouts, well drained.
1/2 cup chicken broth
1 cup of cooked chicken, pork or shrimp
2 cups thinly sliced cabbage,then chopped.
Half of a grated carrot
1 rib of celery, chopped
1 small onion, chopped

Cook all ingredients in wok or skillet adding 2 tsp. soy sauce , Use slotted spoon and place 2 Tbls. mixture in middle of wrapper, roll up tucking in ends. Cook 3-5 minutes in hot oil (not olive oil), turn one time when a little brown. Drain well on paper towel. Serve warm. Keep warm in oven while cooking remaining egg rolls. Drop gently into the hot oil.

Coconut Squares ***

Chewy squares in two layers with brown sugar in the bottom, coconut in the top. Put stick of butter in medium bowl whip with electric beater or large spoon. Add 1/2 cup packed light brown sugar, beat well. Add 1 cup sifted flour; mix well. Pat into greased 9x13x2 in.pan, bake 375 D.for 12 minutes. Into bowl break 2 eggs,beat with fork, add 1/2 tsp.salt, 1 tsp. vanilla, 1 can flaked coconut, 1 cup chopped nuts, 1/4 cup all purpose flour and 1 cup packed brown sugar, mix well. Spread evenly over crust in pan. Bake 375 D. for 20 minutes. Cut in small squares, cool in pan. These are rich, very good and freeze well. Always nice to have a little sweet to offer when company drops in. They will last a little longer too if part is put in the freezer.
