About Garlic:   

                      Whether you're after a sweetly subtle hint or a bolder taste, garlic's flavor can be controlled. If you toss a whole clove of garlic in a soup or casserole, you will get a gentle hint of garlic.  But, if you wait just before serving time to crush or finely chop fresh garlic into the pot you will have a more potent effect.  I usually buy 2-3 whole cloves not in the box, store in plastic bag in cupboard. The Christopher Ranch in Gilroy, Ca. produces  around 70 million pounds of garlic each year. There is no end to the uses of garlic - one way is garlic sautéed in olive oil with red pepper flakes and tossed over pasta.

Mississippi Mud  Cake    350 D. 30-35 minutes     

Mix in large bowl - Melt two sticks butter, stir in 2 cups sugar, 4 eggs. In sifter put 1 1/2 cups flour and 1/2 cup cocoa.  Add dry mixture to butter mixture and stir well.  Put into greased 9 x 13 pan that is sifted with cocoa.  Bake 350 D. for 30-35 minutes, take out when still just a little soft. 
Prepare icing: In microwave bowl place 1/2 stick butter and 1/2 cup milk, heat, then add one box confectionery sugar, 1/3 cup cocoa and 1 tsp. vanilla extract. Beat well until mixed then pour on warm cake.

Easy  Pie

One can of pie filling, such as blueberry, strawberry, cherry or blackberry. One graham cracker crust.
In bowl put one package of cream cheese, 1/2 cup confectioners sugar, 1 Tbls. lemon juice, beat then stir in 3 large
Tbls. cool whip.  Spoon in crust, add pie filling, top with cool whip and refrigerate until time of serving.

Chicken Salad In Melon Rings
    ( 6-8 servings)

4 cups cubed cooked chicken
3 Tbls. lemon juice
1 cup sliced celery
1 cup halved seedless grapes
1/3 cup chopped onion
1/3 to 1/2 cup vinaigrette or salad dressing , your choice.
1/4 cup sliced almonds, toasted, or use walnuts or pecans.
1 Tbls. pimientos
1/4 tsp. salt
4-5 shakes of black pepper
Lettuce leaves
6 cantaloupe rings (1-1 1/2 inches thick) peeled
 
In bowl, toss the chicken and lemon juice.  Add the celery, grapes, onion, dressing, nuts, pimientos, salt and pepper; minx well.  Cover and refrigerate. Just before serving, arrange lettuce on salad plates; top each with slice of melon ring.  Fill center with chicken salad. Serve and enjoy.
One granny apple instead of grapes would do also.
