Broccoli Waldorf  Salad


4-6 cups broccoli florets
1 large red apple, chopped
1/2 cup raisins
1/4 cup walnuts or pecans
1/2 cup prepared coleslaw dressing

Use broccoli florets uncooked or cover bottom microwave with water and cook little over one minute, then plunge into cold water and drain well. In a large serving bowl, combine all ingredients except the dressing. Drizzle with dressing; and toss to coat. Refrigerate leftovers.

Chicken Potato Delight

1 can (10.75 ounces) condensed cream of chicken soup, undiluted
3/4 cup sour cream
1/4 cup milk
1 cup cooked chicken, cut in bite sizes
2 1/2 cups (10oz) shredded cheddar cheese, divided
2 1/2 cups frozen, shredded hash brown potatoes, thawed
1 can (2.8oz) French-fried onions
1 cup crushed sour cream and onion potato chips (or use plain chips)

In a bowl, combine soup, sour cream, milk, chicken and 1 1/4 cups cheese. Spread 3/4 mixture in a greased 2 qt. layer dish or pan. Sprinkle hash browns over the top and press down lightly. Spread with the remaining soup mixture. Sprinkle with onions, potato chips, and remaining cheese. Bake uncovered at 350 D. for 1 hour or until bubbly. Let stand for 5-10 minutes before serving. Yield 6 servings.

Pizza Dogs

1 jar (14 oz.) pizza sauce
15 slices pepperoni, chopped
1 1/2 cups (oz.) shredded mozzarella cheese
12-14 hot dog buns, split
12-14 hot dogs, boiled

In a saucepan, combine pizza sauce and pepperoni; heat through. Stir in the cheese until melted. Spoon about 2 Tbs. into each bun; top with a cooked hot dog. Yield 12-14 servings.

Nutty Brownies

Made in microwave and cooked 6-7 minutes. Yield 1 1/2 dozen.

1 cup sugar
2 eggs
1 tsp. vanilla
1/2 cup butter (melted)
3/4 cup all-purpose flour
1/3 cup baking cocoa
1/2 tsp. salt
1 cup chopped nuts

In a mixing bowl, combine sugar, eggs and vanilla; mix well. Add butter, mix well. Stir together the flour, cocoa and salt; add to butter mixture just until combined. Stir in nuts. Spread into a greased microwave-safe 8-inch square dish. Microwave, uncovered, on high for 6-7 minutes or until top appears dry and springs back when lightly touched. Rotate the dish a quarter of a turn every 2 minutes while in the microwave. If desired, dust with confectioners' sugar.
