Lard:
          The fat made from swine
Leavening:  Placed in baked foods to make them light and porous by     
                    releasing gas during baking
Legumes:    Beans, peas, lentils
Lyonnaise:  Usually means a dish that has been seasoned with onions
                    and parsley

Yummy Chicken Bites

1 (8oz.) cream cheese, softened         
1/2 tsp. lemon juice 1/2 tsp. dried basil                     
1/4 tsp. onion salt
1/8 tsp. dried thyme                     
1/8 tsp. dried oregano
1 cup finely chopped, cooked chicken
1/3 cup finely chopped  celery
1 (2 oz.)  jar diced pimiento, drained
2 (8 oz.) cans refrigerated crescent dinner rolls
1 large egg, lightly beaten
1 1/2 tsp. sesame seeds

Combine first 6 ingredients; mix until well blended.  Stir in chicken, celery, and pimiento; set aside.  Separate crescent dough into 8 rectangles; press perforations to seal.  Spread about 1/4 cup cream cheese mixture over each dough rectangle, leaving 1/2 margin on one long side and no margin on the other side. Roll dough, jellyroll fashion, starting at long side with filling to the edge; pinch seams to seal.  Brush with egg, and sprinkle with sesame seeds.  Cut each roll into 5 pieces; place seam side down on lightly greased baking sheets.  Bake at 375 D. for 12 to 15 minutes or until golden brown. Yield 40 appetizers.  Note: To reheat, bake, uncovered, at 375 D. for 4-6 minutes

Pretty Vegetable Dish

Scrub well new potatoes or small regular potatoes, one or two for each serving; peel around midsection of each potato. Cook until tender.  Lightly steam broccoli flowerets.  On plate put potatoes in center arrange broccoli around potatoes drizzle with olive oil and fresh ground pepper.

Praline Grahams

1 package graham crackers
3/4 cup butter or margarine
1/2 cup sugar 
1 cup chopped pecans

Separate each graham cracker into four sections.  Arrange in a jellyroll pan with edges touching. Melt butter in a saucepan; stir in sugar and pecans.  Bring to a boil; cook 3 minutes, stirring frequently. Spread mixture evenly over graham crackers.  Bake at 300 D. for 12 minutes.  Remove from pan, and let cool on wax paper.  Yield 3  1/2 dozen.
