Hamburger Helpers:
For juicier hamburgers, add 2 to 3 tbls. of tomato juice to each pound of ground beef. Dampen your clean hands with water while shaping hamburger patties so the meat won't stick to your fingers. Form patties using a light touch so meat mixture doesn't become too compact and produce tough, dense burgers. When freezing hamburger patties, layer them between square pieces of wax paper, or plastic wrap for easier defrosting.
For quick tomato juice, use small can tomato paste, add 1 cup water, stir well. Add more is needed.

Yum-yum Strawberry Pie
Bring to boil 1 cup water, 1 cup sugar, 4 tbls. strawberry jello (dry) and 2 tbls. corn starch, stir often until dry ingredients are dissolved. Let cool completely.
With mixer beat in a medium bowl, 8 oz. cream cheese, ¾ cup sugar, and 8 oz. tub of cool whip, until mixed well. Spread into a baked pie shell, or graham crust, then chill.
Slice 1 cup or more of fresh strawberries, put over cheese mixture. Pour cooled jello mixture over strawberries. Chill for at least two hours. Cut and enjoy. Top with more cool whip is desired.

Italian Hamburgers
6 tbls. dry bread crumbs
1/3 cup chopped onion
1/3 cup chopped green pepper
1 garlic clove, minced
3/4 tsp. Dried oregano
1/4 tsp. salt
Few shakes of pepper
1 pound of ground beef
6 tbls. Parmesan cheese, divided
1 (15 oz.,) tomato sauce
1 tsp. Italian seasoning
Hot cooked spaghetti, optional
Combine meat and other ingredients except sauce and Italian seasoning. Put 3 tbls. of cheese in meat mixture. Combine remaining cheese with Italian seasoning and sauce. Shape meat into patties and cook in a skillet and cook patties for five minutes on each side, pour the tomato sauce over patties reduce heat a little, cover and cook for 10-15 longer until meat is not pink. Place cooked patties on top of spaghetti. Serve with vegetables, and salad.

Cheeseburger Loaf
1 pound ground beef
1/4 cup chopped onion
1 can (10 ¾ oz.) condensed tomato soup, undiluted
1/2 tsp. garlic salt
1/2 tsp. salt
1/4 tsp. pepper
1 loaf French bread ( seeds on top is nice)
1 tbls. soft butter
8 oz. process, American or Mexican flavored cheese, sliced.
In a saucepan over medium heat, cook beef and onion until meat is no longer pink; drain. Add soup, salts and pepper; simmer for 5-10 minutes. Slice the top third off the bread. Hollow out bottom half of loaf, leaving a ¾ inch shell, discard removed bread or save. Spread butter on cut side of bread, place loaf on a baking sheet and broil until lightly browned. Spoon beef mixture into shell; arrange cheese slices on top. Broil until cheese is melted about 2-3 minutes, watch closely.
Yield 6-8 servings.
