Best Ever Banana Pudding

2/3 cup sugar
1/4 cup all purpose flour
Dash of salt
1 (14 oz.can) sweetened condensed milk
2 1/2 cups milk
4 large eggs (separated)
2 tsp. vanilla
1 (12 oz.) package Nilla Wafers
6 large bananas
1/3 cup sugar
1/2 tsp. vanilla

In a heavy saucepan put in the 2/3 cup sugar, flour and dash of salt, also add both milks and the 4 egg yolks. Whisk all together on medium heat stirring often until smooth and thick. Stir in 2 tsp. vanilla. In a 3 quart baking dish slice 2 bananas then layer over with wafers. pour 1/3 of pudding mixture over bananas. Repeat again two more times with the bananas and pudding, also place cookies on top of bananas and layer along the sides of bowl. Beat the 4 egg whites on high speed, adding the 1/3 cup of sugar a Tbls. at a time, beating eggs until stiff peaks form, then add 1/2 tsp. of vanilla. Spread over pudding and bake in heated oven 325D. 25 minutes. Yield 8-10 S.

Mississippi Squash

8 medium yellow squash, sliced
2 slices bacon strips
3 medium eggs
5 oz. evaporated milk
1 med. green bell pepper
1 small onion
Fry bacon, drain. Add all ingredients together in a casserole dish. Bake until you see bubbling in the center, 45-55 min.350D.

Tuna Salad (Good on bread or lettuce leaves)

2 cans tuna fish drained
1 granny apple diced fine
2 large slices red onion diced fine

Stir well and add 2-3 Tbls. mayonnaise just enough to moisten. chill a few minutes.

Grandmother's cooking and baking, As now I prepare for my children. With Mother lending a hand -- With Mother and Grandmother's care, All children were shooed from the kitchen, The gathering place of my past. Happy to play on command. In my heart is ever there.
