Tortilla Cups
In a heavy 3 quart pan, heat 2 inches cooking oil or melted vegetable shortening for deep-fat frying. Place one 7-inch flour tortilla on top of hot oil. Using a metal ladle, press ladle in middle of Tortilla, pressing down into the oil. Fry for about 60 seconds, or until golden, being very careful while working with hot oil. Drain on paper towels. Make one for each person eating Taco salad. Use your own recipe or try the one below.

Taco Salad
1 pound ground beef, raw ground turkey or bulk pork sausage
2 cloves garlic, minced
1 - 16 oz. can dark red kidney beans
1 - 8 oz. jar of taco sauce
1 Tbls. chili powder
1 cup torn iceberg lettuce for each serving
4 medium tomatoes, chopped
2 cups shredded cheddar cheese
3/4 cup chopped green pepper
1/2 cup chopped ripe olives
4 green onions sliced
Cook meat, then drain off oil. Add garlic, beans, sauce and chili powder.
Heat to boiling. Then, reduce heat, cover and simmer for 10 min. Mix salad ingredients. Then add meat mixture and toss to mix. Fill up Tortilla cups or serve on plates. Garnish with sliced avocado. If desired, serve with sour cream, salsa or more taco sauce. Or put salad in warmed taco shells.

Cuban Pork Roast
Boneless pork roast: Flour pork roast and brown slowly in skillet just covered with cooking oil. Make slits in different places in the roast and insert slivers of fresh garlic. In slow cooker, place slices of a medium or .
large onion, depending on your liking. Place browned roast on top of onions.
In medium bowl mix regular can diced tomatoes and 1 can of golden mushroom soup, pour over meat. Cook in slow cooker on low for 8-10 hours. Simple and tasty. Serve with vegetables of your choice.

Easy Baked Beans
1 or 2 cans of Pork-n-beans
Chopped, small onion
1/2 cup catsup
3 Tbls. brown sugar
2 Tbls. Bar-B-Q sauce
1/4 cup of chopped green pepper adds more flavor
Touch of salt and pepper
If using two cans of beans, you may want to put them in a 9 x 13 baking dish or pan, oven at 350 D, for 45 minutes. In skillet, add small amount of olive oil or salad oil. Add onions and cook 5 minutes. Then, add green pepper, little more of both if you are going to use 2 cans of beans. Cook 6 minutes, stirring some. Add catsup, BBQ sauce and brown sugar. Bring to boil. Put in salt and pepper and stir. Cover and simmer for 20 minutes. Drain most of the juice from the beans in a cup, in case you want to add more liquid. If just using one can of beans add that to skillet right after bringing catsup to a boil, stir and cover. If using two cans of beans, add what you can to the skillet to heat the beans, then put in oven.
For a more complete meal, boil or microwave hot dogs in water for 2 minutes, drain well and place few in skillet or in larger pan in the oven.
Makes a good family meal.
