Hearty Bean Soup
3 or 4 cups cooked white beans
1/4 head of large cabbage
2 large carrots sliced in bite pieces
1 medium onion chopped
1 tsp. salt and 2-3 shakes of pepper
Can of chicken broth
Optional----
1 or 2 cups cooked chopped ham
2-3 cups water
In large pan add chopped cabbage, carrots, onion, salt, pepper, water and chicken broth. Cook until tender about 15 minutes. Add ham and beans, heat for 15 more minutes. Adding more water as needed. Serve hot with cornbread.

Chopper Salad
Half of a cabbage cut as for slaw or put in processor or chopper. Several sprigs of parsley. Half of a green pepper, half of a small onion, if on hand 2-3 florets of broccoli. If using small chopper only put in small amounts of the vegetable at a time. In medium-large bowl put in cabbage, all chopped vegetables then stir and add salt, pepper, 1/4 cup vinegar, 2-3 tsp. sugar or Splenda, stir well and refrigerate till chilled. If desired you can add pimento or red roasted peppers instead of the raw.

Rocotta Cheesecake (Easy and tasty, not very sweet)
Butter bottom and 2 inches up side of a 9 inch Springform pan, coat with fine bread crumbs, set aside on a cookie sheet, or pizza sheet. Take a fresh orange and lemon, grate zest till you have 3-4 Tbls. In small bowl add zest, ½ cup flour, and 1 cup of golden raisins. In large bowl put in two (15 oz.) cartons of Rocotta cheese, ½ tps. Salt, 1 tsp vanilla and 6 eggs. Run electric mixer adding one egg at a time. With a large spoon fold in the dry ingredients. Pour into Springform pan stirring with spoon so as to distribute the raisins evenly. Bake 350 D 60-70 minutes. Will still be little soft in the center. Cool totally. Run knife around edge of cake, then remove rim. Set on a large plate, when ready to serve dip knife in hot water, dry then slice cake. Don't forget to place the cookie sheet and S. pan both in the oven.
