Fish Cakes

2 slices day-old bread, cut into 1/4 inch cubes
1 egg, lightly beaten
1 Tbl. dried parsley flakes
1 Tbl. lemon juice
1 Tbl. mayonnaise
2 tsp. worcestershire sauce
1 tsp. ground mustard or 1/2 tsp. brown mustard
3 cans (6oz.) crabmeat, drained, cartilage removed, or one large can of salmon, drained, skin removed and flaked.
2 Tbls. vegetable oil or little more if needed, to brown patties. 

In a large bowl, combine the ingredients except oil and the fish. Mix well and then add the crab or salmon. Gently mix, then form into eight balls; flatten slightly.

In a large nonstick skillet, cook the cakes in hot oil for 4-5 minutes on each side until golden brown.

Mixed Green Salad

1/4 cup olive oil
1 Tbl. plus 1-1/2 tsp. red wine vinegar
1 garlic clove, minced
1/2 tsp. dried basil
1/8 tsp. crushed red pepper flakes or 3 shakes of red hot pepper
4-6 cups torn salad greens
2 medium tomatoes, cut into thin wedges or bites
1 medium cucumber, diced
2 Tbls. shredded Parmesan cheese

In a jar with a tight fitting lid, combine the oil, vinegar, garlic basil and pepper flakes, shake well. In a large salad bowl, combine greens, tomatoes and cucumber. Some green pepper, celery or other vegetables may be added, also onion. Refrigerate. At time of serving, drizzle with dressing and sprinkle with Parmesan cheese, toss to coat. Yield 6 servings.

Mixed Fresh Fruit

Don't forget to mix some of your favorite fruit together. Think of the lovely colors put together like a pretty bouquet of flowers. Strawberries, blueberries, an orange, or mandrin can replace the orange, banana, fresh peaches, canned or fresh pineapple. If you can buy a pineapple and turn it upside down for 2-3 days. After cutting off top and bottom on a cutting board, cut down the sides just deep enough to get most all of the brown eyes out, slice 1/2 inch or so and since there is a core in the center, just make 2 slices. On each side of the slice, turn the slice around and cut the other slice of the core. Slice in small pieces and cut off another slice. I put the cut pineapple into a glass jar. Keeps in the fridge for several days. If any brown places on each individual slice, cut it off. Mix fruit in bowl and refrigerate until cooled. Serve on poundcake slice or enjoy by itself.
