Just a little different Chili
1 pound ground beef
1 small onion, chopped
1 tsp. salt
1 tsp. black pepper
1 jar of mild salsa (good brand)
2 cans of chili beans, or 1 can of chili beans and 1 can hot beans
2-3 tsp. chili powder
1 ½ cups of water, more if needed
In large pan put 2-3 tbls. Olive oil, ground beef, cook on medium heat. Chop onion, add to meat, stir well and cook for ten minutes. Add salt, pepper and chili powder, stir well. Add jar of salsa, cook 5 minutes, then add two cans of beans, bring to boil. Put in the water, stir if too thick add little more.water. Cook for 5 minutes more. Easy and very good. Serve with crackers, or cornbread.

Microwave Fudge
3 cups semi-sweet chocolate chips or half chocolate and half peanut butter chips.
¼ cup butter.
1 can sweetened condensed milk.
Microwave for 5 minutes. Beat until smooth then add 1 cup chopped nuts. Pour into buttered 8 x 8 pan or dish. Cool and cut in pieces.

Pumpkin Dump Cake
29 oz, can pumpkin
1-12 oz. evaporated milk
3 eggs
1 cup sugar
1 tsp. salt
3 tsp. cinnamon
1 box yellow cake mix
1 cup chopped pecans
3/4 cup melted butter
Preheat oven to 350 D. Mix everything together but the cake mix, nuts and butter. Pour batter into greased 9 x13 pan. Sprinkle cake mix on top, cover with nuts, pour melted butter over top. Bake 50 minutes.
If desired top with cool whip when ready to serve.
