Recipe and Helps
by Pauline Murphy

Helps:
When you have any meat left over you can add a few ingredients and have a whole new meal. This can be done by cooking half a package of egg noodles, or using left over pasta.  Here's just one idea.  Take left over meat such as chicken, shrimp, beef or pork; you do not need a large amount.  If it is chicken take meat off bones.  Often I will take half an onion chopped, rib of celery chopped, cook in skillet with 2 or 3 tbls. salad or olive oil.  Add a few left over vegetables, 1/2 cup frozen carrots and peas.  To this add  cooked egg noodles or pasta, chicken or beef broth or the granules (1/2 tsp, with cup of water and stir well). Cook frozen vegetables with onions and celery before adding noodles or pasta. Add little more water if mixture is dry.  Any time a mixture is too runny you can mix 2 tbls. cornstarch with water add and stir well. Pepper should be enough with this recipe unless broth is used, salt can be added.  This should give around 4-6 servings given vegetables added.

Parmesan Basket
(this makes a bowl to serve your salad in and is edible)

This recipe is easy, fun and pretty.  Use shredded Parmesan not grated.  Heat 10 in. nonstick skillet over medium heat.  Sprinkle shredded Parmesan into a disk shape (keep cheese light around the edges so it looks lacy.  When disk is slightly golden underneath, carefully remove it using a spatula and your fingers. Quickly drape over a glass, golden side up, and press to form a bowl. Cooled baskets can sit several hours. Place on plate, filling with salad that has a light dressing on it. Pretty and tasty.
