Cucumber Boats
3 medium cucumbers
1 can (6 oz.) tuna, or left over chicken or ham
2 hard-boiled eggs, chopped
1/2 cup shredded cheddar cheese
½ cup diced celery
1/4 cup mayonnaise or salad dressing
2 tbls. sweet or dill pickle relish
1 tbls. chopped onion
1 tsp. lemon juice, fresh or bottle
1/2 tsp. salt, couple shakes of pepper
Cut cucumbers in half lengthwise; remove seeds. Cut a thin slice from bottom so they sit flat. In a bowl combine the ingredients, stir well and spoon into the cucumbers. Double recipe if needed. Or cut lengths in half.

Brickle Drop Cookies
350 D. 8-10 minutes--makes 5 dozen
1 cup butter (2 sticks)
1 cup sugar
1 cup brown sugar
1 tsp. vanilla
1/2 tsp. salt
3 eggs
3 ½ cups all purpose flour
2 tsp. baking soda
2 tsp. cream of tartar (this is also used when whipping egg whites)
8 oz. package of Heath toffee bits or 1-1/3 cups of bits.
Combine soft butter, sugars, vanilla and salt. Add eggs one at a time stirring each time. Mix flour, soda and cream of tartar gradually into mixture, stir well. Add toffee bits, stir, then drop by teaspoons onto greased cookie sheet.
Bake 350 D. for 8-10 minutes.
Makes 5 dozen

Auntie Cassy's Date Balls *****
5 minute cooking time - makes 4 dozen
2 boxes of pitted dates
1 stick butter
1 cup brown sugar
4 tbls. water
2 cups Rice Crispies
1 tsp. vanilla
Mix together in microwave container all ingredients except the cereal and vanilla . Cook for 5 minutes, but stop and stir well after 2 minutes, starting again after each minute and stirring. Remove and add cereal and vanilla, stir well. Cool for about half an hour, Then take mixture onto teaspoon and form into a ball, then roll in coconut or powdered sugar. Place on waxed paper. Requires no refrigeration. I don't like them quite as soft, so I put in ¼ cup of the cereal, wheat germ or ground flaxseed besides the 2 cups of cereal.
These are really good, and can be stored in cookie tin, with wax paper between layers.
