Drippings: Meat pieces or fat that collects in the bottom of cooking pans.
Fold in: The process of folding into the center of a batter with a wooden spoon or spatula and adding ingredients then stirring them in gently and slowly.
Tip for vegetables: Cook with chicken broth and extra water if needed

Peach Pound Cake
1 cup butter (softened)
2 cups sugar
6 eggs
1 tsp. almond extract
1 tsp. vanilla
3 cups all purpose flour
1/4 tsp. baking soda
1/4 tsp. salt
1/2 cup sour cream
2 cups fresh peaches
confectioners sugar
In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, heating well after each addition. Beat in extracts. Combine the flour, baking soda and salt; add to the batter alternately with sour cream, fold in the peaches. Pour into a greased and floured 10 inch fluted tube pan. Bake at 350º for 60-70 minutes or until a toothpick inserted near the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack and cool completely. Dust with confectioners sugar if desired. Yield 12-16

Refreshing Fruit Salad
1 can (11 ounces) mandarin oranges, drained
1 can (8 oz) pineapple chunks, drained
1 medium ripe banana, sliced
1/2 cup halved seedless grapes
3 tbls. mayonnaise
3 tbls. sour cream
1 tbls. honey
1/4 cup chopped walnuts
1/4 cup flaked coconut (optional)
In large bowl combine fruit. In small bowl combine mayonnaise, sour cream and honey. Pour over fruit, stir and refrigerate. Just before serving stir in walnuts and coconut. Servings. 4
