Cooking Tips:   

After stewing a chicken for diced meat for casseroles, etc.  let cool in broth before cutting into chunks - it will have twice the flavor.

To slice meat into thin strips, as for Chinese dishes - partially freeze and it will slice easily.

A roast with the bone in will cook faster than a boneless roast - the bone carries the heat to the inside of the roast quicker.

For a juicer hamburger add cold water to the meat before grilling
(1/2 cup water to one pound of meat.)

To keep cauliflower white while cooking-add a little milk to the water.

Fillet of Flounder Divan

Turn plain fish into an exciting, delicious main dish casserole by layering fish fillets over broccoli spears and topping them with a  Swiss cheese flavored white sauce.  Bake until fish is cooked - top off with more Swiss cheese and brown lightly under the broiler.  This is a tasty dish that will please everyone - even those not fond of fish!

Cheese sauce: 
1/4 cup butter      1 cup finely chopped onion
1/4 cup all-purpose flour            Salt, dash pepper, dash nutmeg
2 cups milk--l egg yolk              1/2 grated Swiss cheese

2 pkg. (10 oz.) frozen whole broccoli spears
2 pkg. (1-lb.size) frozen flounder fillets, thawed
2 Tbls. fresh lemon juice is best
Salt and pepper 
2 Tbls. grated Swiss cheese.

Prepare cheese sauce in a medium sized saucepan, melt butter, add onion and sauté until soft but not browned, stirring often. Add flour and cook 1 minute longer, stirring constantly; remove from heat, add salt, pepper and nutmeg. Next Gradually add milk, stirring thoroughly after each addition until mixture is smooth and no lumps remain.  Return to heat and cook until mixture thickens, stir well.  Reduce heat and simmer 3 minutes longer, continue stirring.  In a small bowl beat egg yolk with a fork; stir in about 1/2 of the hot cream sauce, mix well.  Return egg yolk mixture along with 1/2 cup cheese to rest of sauce in saucepan while stirring constantly.  Cook over low heat, stirring until thickened & cheese has melted. Don't boil. Preheat oven to 375 D. Butter a shallow 2 quart baking dish and set aside.  Cook frozen broccoli in lightly salted water as package directs, separating spears as they thaw.  When almost tender, remove from heat and drain thoroughly, set aside. Separate thawed fish fillets and place on paper towels to drain.  Cut each fillet into 4 pieces.  Brush each with lemon juice; salt and pepper.  Arrange broccoli over the bottom of dish.  Top with fish and pour on sauce.  Sprinkle with 2 Tbls. cheese. Bake 20-25 minutes or until fish flakes easily.  Put under broiler for a few seconds just to brown cheese. 
8 servings.

McCormick's Best Chocolate Chip Cookies

If you like a soft chocolate chip, THIS IS THE ONE.
Yield  around 3 dozen
 
Ingredients: 
3 cups flour                          1 tsp. baking soda
3/4 tsp. salt                          1 1/3 cups butter soft
1 1/4 cups sugar                  1 cup light brown sugar packed
2 eggs                                        4 tsp. vanilla 
1 pkg.(12oz.) semi sweet chocolate morsels
 
1.  Heat oven to 375 D.  Mix flour, soda, salt.
2. Beat butter,sugars, eggs & vanilla until creamy.  Gradually mix in flour mixture. stir in chocolate chips.
3.  Drop dough by rounded tsp. about 2in. apart on ungreased sheets. 
Bake 8-10 minutes. check after 6 min. if bottoms are browned take out sooner let set a couple of minutes before removing to rack to cool.
