Easy and tasty. Yields 6 servings.
8 oz. Velveeta cheese, cubed
2 cans cream of celery soup (undiluted)
2 cups of half and half
1 pound fresh or frozen broccoli florets (cooked and chopped fine)
Put all ingredients in a crock pot for 3-4 hours on low; Or put in a large pan on medium heat, stirring often. No seasoning needed.
Serve hot, but don't bring to a boil. A small amount of chicken broth added makes it less rich.
Creamy Tomato Soup
1 can (8 oz.) tomato sauce
1 Tbs. butter
1/4 tsp. onion powder
Dash of pepper
2 cups milk
In a saucepan, combine first 3 ingredients. Bring to a simmer over medium heat. Stir in milk gradually, stirring continuously until hot, but do not boil. Serve.
Glazed Apple Pie
6 cups apple slices (about six medium apples)
3/4 cup sugar
2 Tbs. flour
3 Tbs. butter
1/8 tsp. salt
1/2 tsp. cinnamon
2 Tbs. orange juice
Toss apples with combined sugar, flour, cinnamon and salt. Turn into 9-inch pastry shell. Sprinkle apples with orange juice and dot with butter. Cover with top crust. Seal and flute edge. Cut slits for escape of steam. Bake at 400 Degrees for 40-45 min.
1 cup powdered sugar
3 Tbs. orange juice
1 tsp. orange peel.
Spread orange glaze over hot pie.
