Crock Pot Dressing

5 chicken breasts; boiled and taken off the bone; cut into pieces
8-inch pan of Cornbread
8 slices toasted bread
4 eggs
1 medium onion, chopped
1 tsp. salt
1 tsp. pepper
2 ½ tsp. ground sage or rubbed sage
2 Tbls. butter
2 ribs chopped celery
2 14.5 oz cans chicken broth
2 cans cream of chicken soup

Crumble breads, add everything but butter; stir well. Pour into crock pot and dot with butter. Cover and cook on high 2 hours, or low 3-4 hours. Fluff with fork and cool 15 minutes. If you desire, you can use the broth you cooked the chicken in and can the chicken broth. Yields 10-12 servings.

Parmesan Potato Soup

4 medium baking potatoes
3/4 cup chopped onion
1/2 cup butter
1/2 cup all-purpose flour
1/2 tsp. dried basil
1/2 tsp. seasoned salt
1/4 tsp. celery salt
1/4 tsp. onion salt
1/4 tsp. pepper
1/4 tsp. rubbed sage
1/4 tsp. dried thyme
4.5 cups chicken broth
6 cups milk
3/4 cup grated Parmesan cheese
10 bacon strips, cooked and crumbled

Pierce potatoes with a fork; bake in the oven until tender. Cool, peel and cube; set aside. In a large soup kettle, over medium heat, sauté onion and celery in butter until tender. Stir in flour and seasonings. Gradually add broth, stirring constantly. Bring to a boil, cook and stir for 2 minutes, add potatoes, return to a boil. Reduce heat, cover and simmer for 10 minutes. Add cheese and milk, heat through. Stir in bacon. Yields 10-12 servings.

Chunky Chicken Soup

3 chicken thighs, cooked and cut into 1-inch pieces
1 cup sliced celery
1/2 cup chopped onion
2 Tbls. vegetable oil or olive oil
6 cups chicken broth
1.5 cups sliced carrots
1 tsp. dried thyme
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup uncooked macaroni
1.5 cups frozen peas

In a 3 quart saucepan, put celery, onion, carrots and part of chicken broth; put on medium heat. Also add the seasonings and peas. To quicken the cooking time, take remainder of broth and macaroni and cook in the microwave until tender. Then, add to soup, stir and cook for ten minutes, then add chicken. Continue until all is mixed well, simmer for another 10-15 minutes to blend seasonings well. Serves 8.
