Food Terminology  A to Z (continued)

Peel:  The process of removing the outer covering of a fruit or vegetable.

Petits  fours:
  Small fancy cakes made by cutting a square sheet cake into different shapes then decorating each differently.

Pilaf:
  A rice that has been specially seasoned and used as a bed under meat, chicken or fish dishes.

Piquant:
  Having a sharp flavor.

Poach:
Cooking foods by surrounding them with boiling water to retain their form.

Turkey  Chili

One pound uncooked ground turkey
Half of a medium onion chopped
Half of a med. green pepper chopped
1 large clove of garlic, minced
1 (16oz.) can tomatoes, cut in pieces
3 or 4 Tbls. can tomatoes & green chilies (more if you like it hot)
2 Tbls. chili powder
1 tsp. prepared mustard
1 tsp. paprika
1/2 tsp. salt  & few shakes of black pepper
1 (15 1/2 oz. ) kidney beans

In a large pan add small amount of olive oil and or salad oil add ground turkey chop up and cook until pink almost gone, add chopped onion, pepper, and garlic.  Stir mixture well, cover and cook 5 minutes, add tomatoes and seasonings, cook for 10 minutes; add kidney beans turn heat lower and simmer for at least 15-20 minutes.  Stir well, and add cup of water or chicken broth. The reason why I often say to cover for a few minutes  is that way the vegetables get done faster and that  takes less time .

Comforting  Cookies

2 cups vegetable oil     
4 eggs 
2 tsp. vanilla                       
2 cups brown sugar, packed
2 cups granulated sugar     
4 cups all-purpose flour     
2 tsp. baking soda               
1/2 tsp. salt
4 cups corn flakes, coarsely crushed 
1 1/2 cups quick oats           
12 oz. package chocolate chips
1 cup chopped pecans or walnuts

Preheat oven to 350 Decrees.  In a large mixing bowl, combine oil, eggs and vanilla.  Add sugars; mix well.  Add flour, soda and salt, stirring well until blended.  Stir in corn flakes, oats, chocolate and nuts.  Drop by large tsp. on greased cookie sheets.  Bake 10 min. Cool slightly and remove to wire rack to cool.  Yield 7 dozen
