Crumbs: 
Bread, one slice = 1/4 cup fine dry crumbs
Graham crackers, 7 squares =1/2 cup finely crushed
Buttery round crackers,12 crackers =1/2 cup finely crushed
Saltine crackers,14 crackers =1/2 cup finely crushed

Golden Coconut Pie

1 unbaked 9 inch pastry shell
1/2 stick margarine, softened
1/2 cup sugar
1/2 cup packed brown sugar
2 eggs
1 cup milk
3/4 cup light corn syrup
1 tsp. vanilla extract
3/4 cup oats
3/4 cup flaked coconut 

In mixing bowl cream margarine and sugars.  Add eggs one at a time beating well.  Beat in milk, corn syrup and vanilla.  Stir in oats and coconut.  Pour into unbaked shell. Cover edges loosely with strip of foil.  Bake at 350 D. for 40-50 minutes or until set, best to check after 35 min. Cool on rack. Refrigerate any pie that is left over.  This is very good and a money saver.

Orange Date Bars            350D. Serves 12-14

1/4 cup margarine or butter
1 cup all purpose flour
1/2 cup packed brown sugar
1 tsp. finely shredded orange peel
1/2 cup fresh orange juice
1 egg
1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 cup chopped nuts
1/2 cup chopped dates

In medium large bowl mix soft butter, add brown sugar, stirring well. Measure out flour, put in the baking powder and baking soda. To the sugar mixture add orange peel and about half of the flour. Next add part of the orange juice, stir well then add remaining orange juice.  Stir in nuts and dates. Spread batter into ungreased pan or baking dish 11 x 7 or little larger. Bake 350D for about 25 minutes.  Take out and cool, you may add sifted powdered sugar on top. This softens up more as it sits and the flavor of the orange juice is even better. Note not a lot of sugar or flour.

Buckeye  Balls
     

(Children like to help with this recipe) makes about 7 dozen
1 (16 oz) jar of creamy peanut butter
1 cup butter or margarine, softened
16 oz.powdered sugar
2 cups (12 oz.) semisweet chocolate morsels
2 Tbls. shortening
 
Beat peanut butter and butter with mixer until blended, gradually add sugar and mix.  Shape into 1 inch balls and chill for 10 minutes. Microwave chocolate and shortening 1 1/2 min. stirring twice.  Dip each ball halfway into chocolate, place on wax paper to harden Store in air-tight containers, placing wax paper between layers.  Nice and easy.

Orange-Dijon Pork Loin Roast
 
2 tsp. dried thyme
1 tsp. salt
1 tsp. rubbed sage
1/4 tsp.ground allspice
1/4 tsp. pepper
1 (4-5 pound) rolled boneless pork loin roast
Orange-Dijon Sauce

Combine all ingredients except orange sauce. Place loin in roaster or 13 x 9 inch pan, lightly grease pan or roaster. Bake 325D for 1 hour, cover and bake 40 more minutes or until a meat thermometer inserted into thickest portion registers 160D. If needed cook longer.  Top with Orange Sauce.

Sauce: 
2 (12 oz.) jars orange marmalade
1/4 cup Dijon mustard
1/4 cup Worcestershire sauce
1 tsp. ground ginger
3 or 4 large garlic cloves, minced
 
Bring ingredients to a boil in a small saucepan over medium heat. Serve with pork loin. Yields 2 cups.

Have some of your favorite vegetables cooked together and maybe Butter Muffins. Recipe follows:

2 cups self-rising flour
1 (8 oz) container sour cream
1 cup butter, melted
 
Stir together ingredients just until blended.  Spoon batter into lightly greased miniature muffin pans, filling to the top.  Bake at 350D. for 25 minutes or until browned.  Yield: 2 1/2 dozen.
