Festive Winter Salad with Walnuts and Apples
1 package (10 oz.) European style salad mix. Or make your own with 2-3 different kinds of lettuce, and red cabbage cut thin
1 thinly sliced tart apple (Granny)
1 package (4 oz,) Blue cheese crumbled
1/2 cup walnut halves or pieces
1/4 cup olive oil or salad oil of choice
1/4 cup balsamic vinegar - salt and pepper to taste
Toss ingredients except vinegar, add part of vinegar (toss means pick up part of ingredients with two large spoons, move to another section and pick up more and move until all is lightly stirred, taste, add remainder of vinegar is desired.

Pineapple Upside-down Cake
325 D. 45 minutes, longer if needed (should be brown on top)
1/4 cup butter 2/3 cup brown sugar
1 medium can sliced pineapple cherries(optional)
2 large eggs separated 3/4 cup all purpose flour
3/4 cup sugar 1/8 tsp. salt
1/2 tsp. baking powder
Melt butter in 9 inch iron skillet, spread brown sugar over bottom of skillet. Drain pineapple reserving 1/4 cup juice. Arrange slices in single layer over brown sugar and place a cherry in center each slice. Beat egg yolks medium speed with electric mixer, gradually add white sugar beating well. Heat up juice few seconds in microwave; add slowly to egg mixture.Combine flour, salt and baking powder, add dry ingredients to yolk mixture beating at low speed. Wash beaters and beat egg whites until they are stiff peaks, fold into mixture and spoon over pineapple slices. Bake 325D. 45 minutes or until top is brown. Cool for a few minutes then turn over on large plate. Can be served with cool whip or ice cream.

Jack Horner Caramel Apples ( this is a repeat)
8 medium apples with sticks
Combine in heavy saucepan;
15 oz. can condensed milk (Eagle Brand type)
1/2 cup sugar, 1/2 cup corn syrup,
1/3 cup packed brown sugar
Cook to soft ball stag(234D) stir constantly. Remove from heat and stir in 1 Tbs. margarine and 1 1/2 tsp. vanilla. Quickly dip and twirl apples, cool on greased cookie sheet. Soft and good! Easier to eat than regular caramel, but about the same flavor.
