-When using muffin tins, if you find you don't have enough batter to fill all the cups, pour a little water
into empty ones. This will prevent the pan from scorching.

-When baking a pie, if you find your crust is browning too fast, wrap strips of tin foil around the edge of the pie to slow down the browning.

-When making muffins, avoid over mixing. Use a spoon to mix the batter; never use an electric mixer.

-When making meringue, always have the egg whites at room temperature, and be sure they are free of any trace of yolk.

-If soup is too salty, add a teaspoon each of cider vinegar and sugar, or a raw potato. Leave the potato in the soup and serve from around it.

-To render more juice from a lemon, warm it in the microwave for 30 seconds.

-While cooking fresh corn, don't salt during cooking time. It will toughen it.

-When cooking pasta to keep the water from boiling over, add a little oil.

-To remove grease from clothes: empty a can of coca-cola into a load of clothes, add detergent and run through a regular cycle. It will help loosen grease stains.

Hurry Up Chicken Pot Pie

2 cups chopped cooked chicken
2 hard-boiled eggs, sliced
1/2 cup thinly sliced carrots
1/2 cup frozen green peas
1 cup chicken broth
1 can cream of chicken soup
1 cup biscuit mix
1 cup milk
1 stick melted butter
Salt and pepper if desired

In a greased 2 quart casserole dish, layer the chicken, eggs, carrots and peas. Mix the broth and soup; pour over layers. Stir the Biscuit Mix and milk and pour this on top, drizzle butter over the topping. Bake at 350 D. until the topping is golden brown for 30-40 minutes. Preheat your oven.

Easy Shrimp Bake

1 cup sliced fresh mushrooms
4 green onions, chopped
2 Tbls. Butter
2 cups cooked and peeled shrimp
6-8 slices day-old bread, trimmed, buttered and cubed
1/2 pound sharp cheese, grated
3 eggs
1/2 tsp. salt
1/2 tsp. dry mustard
Pinch of pepper and paprika
1 ½ cups milk

In a skillet, sauté the mushrooms and onions in butter. Grease a 2 qt. casserole dish. Put the shrimp, mushrooms and onions, half of the bread cubes and half of the cheese in the casserole, stir gently. Top with the rest of the cheese and bread cubes. Lightly beat the eggs with seasonings. Stir in the milk with eggs and pour over the casserole. Bake 325 D. for 40-50 minutes.

Easy Yeast Rolls - 15 rolls

1/4 package dry yeast
1/4 cup warm water
2 ½ cups Biscuit Mix
1 tsp. sugar
1/2 stick melted butter

Dissolve yeast in the water. Put the Biscuit Mix in a large bowl; stir in the sugar. Add the yeast mixture, stirring vigorously. Sprinkle the work surface generously with 1 cup of biscuit mix. Turn the dough onto surface and knead well 15-20 times. Shape dough into 1 heaping Tbls. balls. Place on a lightly greased baking sheet, cover with a damp cloth and let rise in a warm place for an hour. Bake until golden brown 12 to 15 minutes. Brush the rolls with melted butter while they are hot.
