How to tell if an apple is a eating or a baking apple: 

A baking apple is one that has a smooth round bottom. An eating apple has bumps or ridges on the end.  Eating apples do not work best for baking. But the cooking apple may be used also as an eating apple.

Bacon & Tomato Cups

8 slices of bacon
1 tomato, seeded and chopped
1/2 onion, chopped
3 ozs. shredded Swiss cheese
1/2 cup mayonnaise
1 tsp. dried basil or parsley
1 - 16-oz. can refrigerated buttermilk biscuit dough (regular size, not grands)

Cook bacon until crisp. Drain on paper towels and crumble into a medium bowl. Add all ingredients into the bowl, except the biscuit dough.

Lightly grease a muffin pan. Separate biscuits into halves, horizontally. Press each half into the muffin pan cups and fill with bacon mixture.

Bake at 375D for 10-12 minutes in preheated oven until golden. Repeat with emaining biscuits and filling. Can be baked ahead and reheated.

Apricot  Kielbasa Slices

1 pound fully cooked kielbasa or Polish sausage, cut into 1/4 in. slices
1 jar( 12-oz.) apricot preserves
2 Tbls. lemon juice
2 tsp. Dijon mustard or brown mustard
1/4 tsp. ground ginger
   
In a large skillet, brown sausage. Drain and set aside. Add the remaining ingredients to the skillet; cook over low heat for a couple of minutes, until heated through, stirring occasionally. Return sausage to pan and cook for additional 5-6 minutes until thoroughly heated. Serve warm. A tasty appetizer.

Colorful Roasted Veggies

2 medium carrots, cut in half, then cut into small strips
1 bunch of fresh asparagus with a third or more of the bottom part cut off (only using the top half and more tender parts)
1 green pepper, cut into strips
1 yellow or red pepper cut into strips
1 medium red onion or regular onion, sliced and separated into rings
1/2 head cauliflowerets
2 cups fresh broccoli florets
1/4 cup olive oil
2 Tbls. lemon juice
2 small garlic cloves, minced
Dried parsley or crushed rosemary
1/2 tsp. salt
   
Combine all vegetables in a small bowl.

In a separate bowl, whisk oil, lemon juice, garlic and seasonings. Drizzle over vegetables.

Put into greased 9 x 13 in. pan and bake at 350 D for 25-35 minutes.
