Sometimes we ponder on the two words, knowledge & wisdom. Knowledge is knowing a tomato is a fruit. Wisdom is not putting it on a fruit salad.

Bisquick Easy Cheeseburger Pie

1 lb. ground beef
2 eggs
1 cup chopped onion
1/2 cup Bisquick
1/2 tsp. salt
1 cup milk
1 cup shredded cheddar cheese

Grease 9 inch pie plate and pre-heat oven to 400D.

Cook beef and onion, until beef is brown, then drain. Spread in pie plate and sprinkle with salt and cheese. Stir remaining ingredients until blended. Pour into pie plate. Bake for 25-30 minutes. Easy and tasty.

Basil-Stuffed Steak

1 boneless sirloin steak (2 to 2-1/2 pounds & about 1-1/2 inches thick)
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. dried parsley flakes
1 cup lightly packed fresh or dried basil
1/4 cup finely chopped onion
4 garlic cloves, minced
1-1/2 tsp. minced, fresh rosemary (or 1/2 tsp. dried rosemary, crushed)
1/8 tsp. minced fresh thyme (or pinch dried thyme)
1 tsp. olive or vegetable oil

With a sharp knife, make fine lengthwise cuts three-fourths of the way through the steak. Combine salt, pepper and parsley, rub over steak. Coarsely chop the basil then add onion, garlic, rosemary and thyme. Stuff into pockets in steak and using heavy-duty string, tie the steak at 2 inch intervals, closing the pockets.  Drizzle with oil. Grill covered, over indirect medium heat for 35-45 minutes or until meat reaches desired doneness. For rare, meat thermometer should read 140D; Medium, 160D; Well-done 170D. Cover and let stand for 5-10 minutes. Remove string fore slicing.

Or steak can be baked, uncovered at 400D for 45 minutes or until meat reaches desired doneness.

Yield 6-8 servings.

Macaroon Apple Pie

1-1/2 cups all-purpose flour
1/2 tsp. salt
1/2 cup shortening
2-3 Tbls. cold water

Filling:
4 cups sliced, peeled, tart apples
1/2 cup sugar
1/4 tsp. ground cinnamon

Topping:
1/2 cup all-purpose flour
1/2 cup sugar
1/2 tsp. baking powder
1/4 tsp. salt
1 egg
2 Tbls. butter
1/2 tsp. vanilla extract
1/4 cup flaked coconut

In a bowl, combine flour and salt, cut in shortening until crumbly. Gradually add cold water, tossing with a fork until a ball forms. Roll out pastry to fit a 9-in. pie plate; flute edges. Toss apples with sugar and cinnamon, pour into crust. Bake at 375 D. for 20 minutes. 

Meanwhile, combine the first four topping ingredients in a bowl. Stir in egg, butter and vanilla until smooth. Add coconut. Spoon over hot apples, carefully spreading to cover. Bake 30 minutes longer or until apples are tender. 

Yield: 6-8 servings.
