Hawaiian Banana Bread or Muffins This recipe makes 2 loaf pans of bread. Bake 350 D-55 minutes. Or makes 2 1/2 - 3 dozen muffins. Bake 325 D.25-30 minutes. This just might be your favorite banana bread recipe because it is moist and has plenty of bananas in it. I prefer the muffins.
2 cups granulated sugar 1 cup margarine (2 sticks) 6 very ripe bananas,mashed 4 eggs, well beaten 2 1/2 cups cake flour (or all-purpose flour sifted several times) 1 tsp. salt 2 tsp. baking soda
Cream sugar and margarine; add bananas and eggs. Sift flour, salt and baking soda three times. Blend flour mixture with bananas. Do not over beat. Turn batter into 2 greased loaf pans. Preheat oven to 350 D.bake 55 minutes or until toothpick tests dry in center of loaf. Turn out immediately to cool on wire rack. Or bake in sprayed muffin tins at 325D. for 25-30 minutes. Good, and they freeze well.

Summer Salad 1 ripe tomato (medium to large) 1 cucumber 1 small or half of large onion 1 Tbl. lemon juice 1 Tbl. sugar 2 Tbl. vegetable oil or olive oil
Chop and mix tomato, cucumber and onion with lemon juice, sugar and oil. Salt and pepper to taste. Marinate an hour or two in refrigerator.

Chef's Salad Lettuce broke in pieces (nice to use 2 or 3 different kinds of lettuce chopped celery, 3 slices onion, chopped, also half of green, or red pepper or both. Chopped carrot, I often take potato peeler and run it up and down sides of carrot making thin shavings 1 cup or more of left over chicken, beef or pork. Or deli meat can be used, breaking in small pieces. 3 sliced or chopped hard boiled eggs, little olive oil and vinegar, Zesty Italian or dressing of your choice
Always a good tip to chill salad before serving. Also add tomatoes at time of serving, they can be diced ahead of time in bowl or sandwich bag Best to add dressing just before serving or let each person choose their favorite. There is no end to other vegetables you might want to add.
Hard boiled eggs:
Put eggs in pan cover with water, 3-4 shakes of salt. Put on lid and bring to a good boil, shut heat off let set 20 minutes. Drain water off, cover with cool water and peel shells off after lightly cracking on counter, rinse well. Or peel eggs you need and put rest in refrigerator.

Hamburger Stroganoff 1 pound hamburger 1 small onion 3 to 4 slices bacon 1 can cream of mushroom soup 1 small container sour cream 1 package flat noodles 1 can sliced mushrooms or few fresh 1 dash garlic, and another of your favorite seasonings like dried dill salt and pepper to taste
Fry bacon till done; set aside. Brown hamburger, onion, add bacon, mushrooms and soup; simmer for 30 minutes. Cook noodles as directed. Remove meat mixture from heat; add sour cream.. Serve over warm noodles. After cooking bacon discard grease or save for another dish. Also break bacon in pieces.
