When making strawberry shortcake, wash strawberries and slice or cut lengthwise. Use a potato masher to mash strawberries, add sugar and a little water. Put strawberries on sponge cake and top with whipping cream or vanilla ice cream. Biscuits are also good with strawberries.

Though most of the time we use our timed oven so we can go away and come home from church to have the meal already cooked, it works well when we are home also. That way one doesn't forget something that is in the oven.

When making a recipe that calls for mostly canned products, if 2-3 fresh foods are cooked and added to the recipe it makes all of it taste fresher. Say left over frozen peas and carrots. Or green pepper.

Yum Yum Strawberry Pie

You will need:

Sugar
Cornstarch
Strawberry jello
Cream Cheese
Cool whip
Strawberries

Bring to boil 1 cup water, 1 cup sugar, 4 Tbls. dry strawberry jello, and 2 Tbls. corn starch. Stir well until well dissolved. With a mixer, mix together 8oz. softened cream cheese, 3/4 cup sugar, then add 8 oz. of cool whip. Put cheese mixture into baked or graham cracker pie shell (chilled).

Next, place 1 cup or more of strawberries cut lengthwise on top of cheese. If using large pie dish you can add a little more strawberries. Pour over the glaze and chill for 3-4 hours. Serve with dollop of cool whip on top.

Raspberry-Coconut Pinwheels

375D for 8 min. 3 1/2 dozen yield

1 stick butter soft
1 cup sugar
1 tsp. baking powder
1/4 tsp. salt
1 egg
1 tsp. vanilla
1 3/4 cups flour (all-purpose)
1/2 cup flaked coconut
1/3 cup seedless raspberry jam
1/4 cup finely chopped pecans

In a large bowl beat butter with mixer for 30 seconds. Add sugar, baking powder and salt. Beat mixture until combined, scraping bowl with mixer. Beat in egg and vanilla; beat in as much flour as you can, then use a wooden spoon to stir in rest of the flour. Cover and chill for 2 hours. Make filling in small bowl, combining coconut, jam and nuts. Set filling aside. On floured surface, roll dough into a 12 inch square, spread with filling leaving a 1/2 in border. Roll up dough, wrap in plastic wrap or waxed paper, chill 4 hours. 

Preheat oven 375D. Line a cookie sheet with parchment paper or lightly greased foil. Cut roll into 1/4 inch slices, put on cookie sheet. Bake 8-10 minutes until lightly browned. Cool one minute and remove to rack.  Enjoy.

The dough could be made the day before.
