Grilled cheese or Peanut Butter sandwiches: 

Large skillet, I prefer iron skillet. 
Two slices of bread for each sandwich, butter and cheese or peanut butter. 
If fixing more than two sandwiches turn oven on to 250D.  Cook sandwich than place on cookie sheet in oven, when ready to serve cut in half.
To cook your sandwiches butter one slice of bread and place in skillet, put on top peanut butter, or two slices of cheese.  Next butter slice of bread , place buttered side up on top of bread in the skillet.  Cook till brown about 6 minutes, turn over and brown other side. Fix remaining sandwiches, putting in oven to keep warm if desired.
Cheese should be very soft and partly melted, heat should be on medium. There is no end to the things you can add to a grilled cheese sandwich.  Tomatoes, pimento, bacon, sliced ham or hot dog, deli turkey, onion or pickle.

Swope  Bread
(Home made bread recipe)
350D. 1 hour and 10 minutes.        2 loaves in 9 x 5 x 3 in. loaf pans.
No yeast, no kneading, good and tasty, also works for sandwiches.

4 cups unsifted graham or whole wheat flour
2 cups unsifted all-purpose flour
1 cup sugar
2 tsp. Salt
2 tsp.  Baking soda
1 quart buttermilk (4 cups)

Preheat oven to 375C. Grease loaf pans. Combine flours, sugar and salt.  Combine buttermilk and baking soda. Stir buttermilk and soda into flour mixture. Do not over mix.  Turn into prepared pans.  Place into oven, then turn oven down to 350D.  Bake 1 hr. and 10 min. or until done in center when tested with a toothpick.  Turn out and cool on a rack.  Slice thin. Also good for sandwiches or toast (takes longer in toaster to brown.) Before placing in oven pick up pan and lightly tap it on the table . I do this with cakes also.

Maple Cream Bonbons  (This is definitely a make again recipe)

1 cup butter (a must) (2 sticks)
3 ½- 4 ½ cups confectioners sugar
3 Tbls. Maplelene flavoring (not syrup)
2 cups finely chopped walnuts
2 cups semisweet chocolate chips
1 cup butterscotch chips. May need a little more for dipping all the Bonbons.

In mixing bowl cream butter, sugar and maple flavoring until smooth, stir in walnuts.  Shape into small 1 inch balls, place on wax paper lined baking sheet and freeze until firm, half hour or so.  When ready melt chips in microwave 30 seconds at a time until melted. Using tongs dip each ball into melted chips, place on wax paper till set. Keep in refrigerator or freezer.  Very good. Remelt chips is needed.

Apple Cream Tart (This is a little out of the ordinary, hope you like it)

You will need a greased 9 inch Springform pan and a pizza pan or cookie sheet to set it on in the oven.
1 ½  cups all- purpose flour
3 Tbls. Sugar
1/4 tsp. Salt
1/2 cup cold butter

Combine flour, sugar, salt , and butter cut up in pieces. Use fork to mix until mixture resembles coarse crumbs.  Press into bottom and 1 inch up sides of a buttered 9 in. Springform pan.  Set aside.
Filling:  3  large tart apples peeled and sliced.  ½ cup sugar, 1 tsp. cinnamon, ¼ tsp. nutmeg and 1 cup heavy whipping cream and2 egg yolks.  Arrange apples over crust, combine sugar,spices and sprinkle over apples.  Bake 400D for 15 minutes.  In a small bowl stir with fork the cream and yolks, pour over apples and bake 25-30 minutes longer, until apples are tender and filling almost set.  Cool for 1 hour.  Then remove sides of pan, place on a plate.  If desired whip remaining cream and serve on top.
