Food Terminology  A to Z (continued)

Ravioli:  Small square pasta shapes filled with cheese or meats.
Relish:    A flavored blend of spices and sweet pickles.
Render: The process of removing fat from meat, usually over a low heat.
Rissole:  A mixture of meats encased in a pastry shell and  deeply fried.

Cheesy Vegetable Casserole    For 4 servings you will need:

1/2 lb. American cheese.
1/2 cup butter or margarine, melted.
1 bag (16 oz.) frozen vegetable blend containing broccoli, cauliflower and carrots, thawed and drained.
1  cup (about 30) crushed butter crackers such as Ritz..
 
Preparation:  Cut cheese into cubes, place in saucepan with part of melted butter, heat over medium heat, stirring until cheese is melted. Place vegetables in a 1- quart casserole baking dish.  Pour cheese mixture over and mix well.  Stir cracker crumbs in remaining melted butter; sprinkle over top of vegetable mixture.  Bake uncovered at 350 D. for 20- 25 minutes.  Serve at once.

Honey  Bear  Bars ***


3/4  cup vegetable oil 
1/4 cup honey
1 cup sugar   
2 cups all - purpose flour
1 cup chopped nuts or raisins 
1 beaten egg
1 tsp. baking soda
1 1/4 tsp. cinnamon           
1/2 tsp. salt

Preheat oven to 350 D.  Mix all ingredients together until evenly blended.  Press in well greased cookie sheet pan. Bake for 20 minutes or until golden brown.  Easy and very good.

Icing:
Spread on bars while warm, leave until frosting sets then cut in med. squares and remove from pan.

1 1/2 cups confectioners sugar
1 tsp. vanilla
2 Tbls. water
2 Tbls. honey
4 Tbls melted butter.
Fresh orange juice would be nice instead of  water.

Sally's  Dinner Rolls ***

For  18 rolls-------2 greased muffin tins  400D. 10-12 minutes.  watch closely  after 5 min. (if bottom is browning put up on higher rack.) These rolls are one of the best I have found, but they do bear watching closely.
1 Package active dry yeast or 2 1/4 tsp. yeast from jar; 1/4 cup warm water 105D- 115D. 1/3 cup shortening, melted & cooled; 1/4 cup sugar, dash salt; 3/4 cup milk, scalded. 2 eggs, 3 1/2 cups all-purpose flour. After mixing and shaping take egg whites from shell and brush on top of rolls, sprinkle on sesame or poppy seeds on top.

Mixing:  Combine yeast & warm water in large bowl, let stand for 5 minutes.  Add melted shortening, sugar, salt.  Add milk and eggs, stir until blended.  Gradually add flour, first one cup stir well then remaining flour.  Turn onto lightly floured surface, knead a few times until dough is ready to handle, only add a little flour.  Wash out large bowl, grease well, cover and let rise for 30 minutes.  Punch down, divide dough in 3 parts, pinch off and roll in ball little larger than walnut size.  Place in muffin tins, one ball to each place. Let rise 50-60 min. Bake until brown, 400 D. 10-12 min. Sometimes I take them out cool and put in bag in freezer, take out later and micro-w. for  20 seconds after thawed.  Better and easier than most recipes.
